Sopas is the Filipino version of minestrone and is one of my favorite soup. Loved by Filipinos and one of the most easiest and common Filipino recipes, this good food soup may be served as a snack or as a complete food meal and usually available in small eateries around the country, since it is so good. There are simplier ways to cook sopas, but we used pork and corned beef for this easy recipe. This simple and good food dish is best serve on cold weather and will definitely make you feel warm in and out.

Serves 3-4  Prep Time 15 minutes  Cooking Time 20-30 minutes

Ingredients

2 cups macaroni of your choice, elbow is usually used though

1/2 cup carrots, chopped in strips
200 grams corned beef
1/4 kilo pork, chopped in strips or small pieces almost similar to menudo cut.
10 cups water
1/2 head garlic, minced
1 medium size onion, chopped
1 tbsp fish sauce
1/4 cup evaporated milk
salt and pepper
cooking oil, use no cholesterol one


How To Cook

Bring to boil 10 cups water in a big pot.

Add the macaroni and simmer for 15 minutes or until the macaroni is soft and tender, add more water as needed.

Heat oil in a separate pan and saute garlic and onion. Add pork and corned beef, and stir cook for 2 minutes. Add some fish sauce and stir cook for another 2 minutes.

Add sauteed pork and corned beef to the macaroni soup and simmer for about 2 minutes, do not cover.

Add the carrots and simmer for another 2 minutes.

Add some salt and pepper to taste.

Add the evaporated milk and cook for another 2 minutes.

Serve immediately.

  4. Looks like this soup delicious with a texture that fits, can be trying because there are many ingredients and spices in my market place, and for pork would I replace it with beef.
