Tinapa or Smoked Fish is a common and very affordable viand here in the Philippines, yet it is a good food. And although it is tagged by Filipinos as a poor man's meal, it has come a long way now and reclaiming its name. It is now often being used as additions to rice recipes, pasta recipes, etc.
Serves 5 Prep Time 20 minutes Cooking Time 15 minutes
3 tbsps virgin oil
5 cloves of garlic, minced
1 1/2 cups tinapa, (smoked fish), flakes
5 cups cooked rice
1 cup red tomatoes, chopped
1/2 cup red salted eggs, chopped
1/2 cup red onions, chopped
1 teaspoon ginger, minced (optional)
1 tablespoon spring onion
1/2 cup pork chicharon bits (make sure it is new and not rancid)
How To Cook
Heat oil and saute garlic in a wok for few minutes.
Add tinapa (smoke fish) flakes and cook until lighty brown.
Then add the rice and mix well with the sauteed fish. Cook until the fish is mixed evenly with the rice.
In a bowl, combine all other ingredients.
Transfer the rice in a serving bowl and top with the tomato mixture and add some chicharon bits.
