Nilaga is a Filipino word that means to boil. This good food dish is one of Filipino recipes which is so easy to cook. You just have to put everything in the pot and let it cook. Nilagang Baboy is one of the favorite good food soup dish here in the Philippines. Easy recipe for it:
1kg (2lbs) pork (choice of belly, neck hocks, or any bony part of pork), cut into serving pieces
1 medium onion, sliced lengthwise
2 liters (8 cups) water
1-2 medium potatoes, peeled and quartered
2 saba (plantain) babanas, each sliced into two pieces
1 pechay baguio (chinese pechay/wombok) cut lengthwise
2 tbsps patis (fish sauce) or more to taste
1 whole medium cabbage, quartered
salt and pepper to taste
125ml (1/2 cup) patis
Juice of 3-4 calamansi
1 chili for a little kick (optional)
Place pork and onion in a casserole and pour in the water. Bring to the boil, then lower heat to medium and simmer for 30 minutes or until the meat is tender. Remove scum (coagulated blood) that accumulates on top of the broth.
Add potatoes and, after 5 minutes, the bananas. Continue simmering until potatoes and bananas are tender, about 10 minutes. Season with patis, salt and pepper.
Add cabbage and cook just until cabbage becomes tender-crisp for about 2 minutes.
Remove from heat and add pechay. Do not overcook the vegetables.
To make dip, combine patis and calamansi juice in a bowl.
Serve hot with rice and dip
